Yesterday Dan and I had an awesome salad for lunch on the Ultimate Reset. My handsome meat and potatoes man loved it so I know I need to share it with you all!!
Microgreens Salad (serving size: 1)
1/4 cup shredded carrot
1/4 cup chopped cucumber
1/4 cup sliced red bell pepper
1/4 cup sprouts (alfalfa, radish, or broccoli)
1/4 cup chopped tomato
1/4 cup chopped jicama
Fresh herbs like dill, basil, cilantro and parsley
1/3 cup toasted seeds and nuts
Throw together in a big bowl and eat with this dressing please!
Creamy Garlic Dressing
1/2 cup Extra Virgin Olive Oil
1/4 cup Apple Cider Vinegar
3 to 5 cloves garlic, crushed
3 TBS fresh lemon juice
2 TBS chopped fresh parsley
1 tsp Himalayan Salt
1/2 tsp Dijon Mustard
1 TBS unfiltered honey or raw agave nectar.
Blend on medium high for 30 seconds and store in an airtight container in the fridge. This recipe makes 8 to 10 servings.
