I LOVE Quinoa.
For those of you who are unfamiliar with quinoa, it is the supergrain of the future.
Rich in protein, fiber and Iron- and gluten free. It is also a complete protein so it is ideal for all you Vegan and vegetarians out there.
You can use it in pancakes, as breakfast oats, over salad. So delicious.
Tonight for dinner, I decided to make something from the nutrition guide that came with Focus T25.

Quinoa Patties over Spinach
3/4 cup cooked quinoa
1/2 medium red bell pepper, finely chopped
4 Tsp flaxseed
Sea salt and black pepper to taste
1 large egg white
Nonstick cooking spray or coconut oil
3 cups fresh baby spinach
*Combine in a bowl cooked quinoa, bell pepper, flaxseed, salt, pepper, and egg. Mix well. Form into two balls. Place one ball in a 1 cup measure. Press Patty using fingers. Turn cup over to release patty. Repeat with other ball.
* heat medium skillet and add cooking spray or oil.
*Place patties in skillet; cook for 2 minutes. Turn and cook for 2 more minutes or until cooked through and light golden. Remove from skillet. Keep warm.
*Add spinach to skillet and cook until wilted.
*Place spinach on a serving plate and top with patties.
I added a little nutritional yeast and hot sauce and a little lemon juice. So good!
